Sourdough Sausage Egg Breakfast Casserole
Sourdough egg bake made with eggs, cheese, sausage, peppers and sourdough bread is a super easy dish to throw together the night before and enjoy a delicious breakfast the next morning. Easy enough for any old weekday, but fancy enough for Christmas morning!!

If you have spent any amount of time around my family, you have probably been served this classic egg breakfast casserole at some point. Any time there is an occasion, you can plan on a sourdough egg bake making an appearance at some point. Everybody loves it, and it’s super easy to make for a crowd! Growing up, it was a staple at holiday breakfasts. I’m looking forward to making it for Christmas morning coming up in just a few days!

There are many reasons that this Sourdough Egg Bake is a favorite breakfast recipe, but one thing I love is that it is super easy to throw together the night before All you have to do the next day is bake it. As a mom, I much prefer having all the breakfast prep done and dishes washed the night before. Especially when we have company, I always make some kind of overnight breakfast casserole. That way, I can enjoy the morning instead of spending all of my time in the kitchen.
Sourdough egg bake is also a weekend breakfast favorite around here. This sourdough egg bake is a great way to use up any leftover sourdough bread! With the addition of fresh eggs, breakfast sausage, shredded cheese and bell peppers, it is the perfect all-in-one sourdough breakfast casserole.
why sourdough?
This egg bake calls for cubes of bread as the main ingredient, along with the eggs. We switched to almost exclusively sourdough whenever we eat wheat after learning how much easier it is for our bodies to digest after going through the fermentation process. In addition to the health benefits, we love the subtle tang of traditionally prepared sourdough. Our favorite bread is this Sourdough Sandwich Bread – I make about 4 loaves every week, and this is pretty much the only bread my family eats. It’s great for toast, sandwiches, a quick snack – pretty much everything.

what you’ll need to make sourdough egg bake –
eggs – it’s always a good idea to start the day with protein!
milk – use raw or organic whole milk if you can (let the milk come to room temperature so it doesn’t harden the melted butter when you mix them together)
butter – everything is better with butter 🙂
sourdough bread – a sourdough loaf that is a few days old is perfect for this recipe
breakfast sausage – I always use turkey breakfast sausage (I have been able to find it at all of our grocery stores, by the pork sausage. I prefer turkey sausage because it doesn’t have any of the ingredients like MSG, nitrates, corn syrup, caramel color and other nasty things like pork sausage does. It’s literally just meat and spices.)
shredded cheese – I use mozzarella, monterey jack or white cheddar cheese. Buy a block and shred it yourself to avoid the additives in store-bought shredded cheese.
bell peppers – of course I’m using a green and a red pepper for Christmas this week!

how to make sourdough egg bake
THE NIGHT BEFORE:
Start by cutting sourdough bread into cubes and chopping bell peppers. Brown turkey breakfast sausage in a cast iron skillet until it’s completely cooked through. Chop the sausage into small pieces with a wooden spoon or spatula while you’re cooking it. Crack and whisk eggs in a large bowl. Add milk and melted butter. Whisk in garlic powder, dry mustard, salt and pepper. Stir in sourdough bread cubes so they are all evenly coated in the egg mixture. Grease a 9×13 glass pan with avocado oil or butter. Pour into greased baking dish. Sprinkle browned sausage, bell peppers and shredded cheese over the top in an even layer. Give all of the ingredients a gentle stir, and sprinkle a little more cheese over the top at the end.
Cover with plastic wrap and store in the refrigerator overnight (or at least 8 hours).
THE NEXT MORNING:
Preheat the oven to 375 degrees F. Remove the plastic wrap and replace with aluminum foil. Bake the sourdough egg bake, covered, for 45 minutes. Uncover, and bake another 15 minutes. Allow the egg bake to set for a few minutes after taking it out of the oven before cutting into it.

- 1.5 cups milk
- 4 T melted butter
- 8 slices sourdough bread
- 1 lb ground turkey sausage
- 1 red pepper
- 1 green pepper
- 1 lb mozzarella or Monterey Jack cheese
- 1 t dry mustard powder
- 2 t garlic powder
- 2 t salt
- 1/2 t black pepper
